Chainstack subgraphs support Holesky

Hi,

We need to be able to deploy subgraphs on the new Ethereum testnet Holesky, as Goerli will be sunset soon.

For our liquid staking protocol, we can't deploy it on Sepolia as we need our own validator set to be able to propose and validate blocks.
